OK, have CommVault running on a windows server, And would like to back up a ESXI server and associated SANS. Any suggestions on how to go about doing this.

This is quite a simple task.
Create a Virtualisation client for VMware and set its address pointing to ESXi host.
Then in the content you may just choose the desired datastore.
