Can the value of the Size of Application field from Backup Job Details be changed while the job is running (after Scan phase)?

Yes size of application generally always grows as the job progresses. I don’t know of any agent that gets this information at the start of the job exclusively - but there may be some?

As @Collin Harper mentioned, sometimes if the size of application grows bigger than what you could possibly be protecting (i.e 100 GB of VMs but size of application is 150 GB) - it generally means that the job encountered and error and retried. That gets added to size of application of the previous attempt. If you look at the attempts tab you can get more details.

Can you confirm what agent the backup is for? 
That field can also be skewed by errors. Do you see any errors or failures on the job?
