if I want to use proxy for backup copy of Exchange / SQL data I must install the complete Exchange / SQL binary onto the proxy ?
If I have a Microsoft software assurance I must pay for the installation of Exchange / SQL binary onto the proxy ?

You need the Exchange Management Tools if you want to run integrity checks but you do not need all of the Exchange binaries installed. Other than that, a backup copy mounts the snap and does a file system backup of it.
