I would like to understand why when I see 32.35TB to be copied to tape, the aux copy is completes 100% successfuly, but the Total Data Processed (29.69TB) is less than the Total Data To Processes.

Good afternoon. Can you verify if the setting “Disable jobs for Auxiliary Copy that met its retention” is set in the Media Management configuration as seen here:
Your Aux Copy ran for a long time. If any jobs were set to age in that time they wuld not be picked for Aux copy if this setting is enabled.
