If I add a VM to the filter list in a VM-subclient today, to stop it from being backed up, and we have 365 days monthly retention in the subclient storage policy, it will still be available for restore in june, right?

Or do I need to create a separate subclient, with its own storage policy with retention details, add the VM to the subclient, run a full backup, and finally disable activity?

Good morning.  Setting a filter to stop a VM from being backed up going forward does not affect retention on past jobs.  Retention is set at the storage policy copy level.  You would have to change that retention in order for the past jobs retention to be affected.
