I am using Metallic to backup an O365 Tenant.
Can I add a second tenant and start backing up it straight away ? the second tenant is a mix of user & shared mailboxes so will these new user mailboxes just take from my current Tenant mailbox license pool?

I believe that you want to create a second Exchange application. You can very well create it and the license will be taken from your current subscription license pool.
